Huevos Rancheros with fried duck eggs, coriander & spicy Mexican slaw

I came across this recipe, funnily enough, in a little family run restaurant just outside Sydney, Australia. It was one of these places where all the chairs are different and you felt like you were sitting in someone's living room. It had been a heavy night so brunch was very much on our minds. My version is a bit of everything, sweet, spicy and can be adapted to vegetarian.

All You Need Is:

  • 4 flour tortillas
  • 1 ripe avocado
  • Tomato salsa ( homemade or jar )
  • 8 duck eggs
  • 1 red onion
  • 500g monterey Jack cheese
  • 1 bunch of coriander
  • 500g sour cream
  • 500g slice bullet chorizo

For the slaw
  • 1 red onion
  • 1 head of fennel
  • 1 red pepper
  • 1 small red cabbage
  • 1 large carrot
  • 500g creme fraiche
  • 1 tsp paprika
  • 1 tbsp wholegrain mustard
  • 1 tbsp BBQ sauce
  • 1 tbsp toasted & ground fennel seeds
  • 1 tbsp caster sugar
  • Fresh coriander
  • 1 lime, zest & juice
  • Sea salt & cracked black pepper

Method:

Start by preheating your grill or oven ( gas 4/ 180oc )

For the Mexican slaw, slice all raw ingredients thinly and place into a large mixing bowl. Add all other ingredients to your bowl and mix well. Season to taste.

Place all 4 tortillas onto a baking tray and evenly spread your tomato salsa over the top along with your chopped avocado, sliced red onion, bullet chorizo & Jack cheese. Then place your tortillas in the oven for about 5-8mins until toasted. If you're using the grill it may take a little less time.

In the meantime cook your duck eggs to your liking. Fried, poached or scrambled it's up to you.

By now your tortillas should be toasted and eggs cooked. Finish with a generous dollop of sour cream and chopped coriander. Serve with the slaw and a steaming hot cappuccino.

Chef’s tip

Why not add some crayfish or lobster to you rancheros for that special occasion or some refried beans and grilled sweet corn.
