Recipe of the week - Carrot & Mixed Seed Flapjacks

It's bake week!

This week and I would like to share a simple recipe for great tasting carrot and mixed seed flapjacks.

Ingredients:

150g soft light brown sugar
175g unsalted butter
5 tbsp golden syrup
350g partridge Oates
225g carrots (peeled & finely grated)
3 tbsp pumpkin seeds
3 tbsp sunflower seeds
3 tbsp chai seeds (optional)

Method:

1) Preheat the oven to 200c / Gas mark 6. In a large pan, melt the butter, sugar, syrup together, stirring until melted and smooth

2) Remove from the heat and stir in the carrots, oats and seeds, stir until thoroughly mixed. Tip into a 12x8 inch tin and level off. Baked in the centre of the oven for 15 minutes.

3) The flapjack is ready when it is lightly golden around the edges. Remove the tin from the oven. Whilst hot cut into 16/20 squares, then leave to cool. When cold remove from the tray and cut out the squares. Eat straight away or store for up to four days in an airtight container.
