Recipe of the week - Grilled Aubergine + Spicy Chickpeas

Happy new year to all, hope everyone had a great one.

This weeks recipe is a vegetarian dish of grilled aubergine with spicy chickpeas, nice & easy and really healthy, a great one for those wanting to cut back on calories after the festive holidays!

Serves 2

The Ingredients:

1 red onion, cut into small dice
1 clove garlic, finely chopped or crushed.
1 small red or green chill, deseeded and finely chopped
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp ground cinnamon
200g plum or ripe vine tomatoes, chopped small
1 large or 2 small aubergines
1 can of chickpeas (400g)
4 tbsp olive oil or rape seed oil
Juice of 1/2 lime
4 tbsp Greek yoghurt
2 tbsp fresh coriander, roughly chopped
Sea salt and fresh ground black pepper

The Method:

1. Start by heating 2 tbsp oil in a heavy based sauce pan over a medium heat, add the onion and garlic and cook for 5/10 minutes until golden brown. Lower the heat and add the spices, tomatoes and 200ml water, bring to the boil and simmer for 5 minutes, add the chickpeas and a good pinch of salt and pepper, simmer for another 5 minutes, stirring occasionally.
2. While this is happening heat up a griddle pan or a heavy based fry pan (medium to high). Brush each aubergine slice with the remaining oil, sprinkle with salt & pepper, then grill until golden, do this on both sides until tender.
3. Mix the yoghurt with the lime juice
4. Taste your sauce and adjust seasoning if needed, add the coriander and stir.
5. Arrange the aubergine slice onto plates, spoon on the chickpeas and dollop on the yogurt on top and your ready to eat!
