Green Grazing

For a healthy and hastle free meal, My Zucchini Pasta is a winner, not only is it Gluten Free but is is also delicious and flavoursome and takes just mintues to prepare. 

For this dish you will need (Serves 2);

  • 3 x Large Zucchini's(Courgettes)
  • 1x Garlic Clove
  • 1x Pack of Broccoli Stems
  • 1x pack of Asparagas tips or half a dozen stems.
  • A nice handful of spinach
  • 1x tablespoon ofBasil Pesto.
  • 1x Ball of Buffalo Mozzarella (personal preference)   

Recipe.
1. Using a grater simply grate all your zucchini's finely.
2. Crush garlic and chop into chunky bits.
3. Heat up your wok (or pan) adding a drizzle  of olive oil and then adding the chopped garlic.
4. Then toss in the broccoli stems and asparagus, heat for a couple of minutes before adding the grated zucchini's and stir in.
5. Once veggies are cooked add a generous spoonful of pesto and adding your spinach and then toss together until leaves have steamed.
6. Gently serve the vegetables on yours plates. Then using your hands tear the buffalo mozzarella into nice size pieces and liberally scatter over your medley of lush greens! Season with some black pepper and it is ready to serve!!!.
