Recipe of the week - Baked figs wrapped in prosciutto or Parma ham stuffed with your favourite cheese

This time of year, there really are such tasty figs too buy. This simple, but tasty dish works just perfectly as a starter, a nice lunch or a light dinner and will really have you wondering why you had never cooked them before. Baked figs wrapped in prosciutto or Parma ham stuffed with your favourite cheese is a winner with all! Ive used a blue cheese for this recipe but you can fill them with what you like!

You will need.. (Serves 2) :

- 4 nice size figs
- 4 slices Parma or prosciutto ham
- 100g blue cheese
- 2 tbsp honey
- 2 drizzles olive or rapeseed oil
- 2 handfuls of rocket or mixed leaves


And the method behind the madness...

-Preheat your oven at 220c or gas mark 5.
- Place your figs upright on a chopping board, using a sharpe knife make 2 cuts into each fig, only cutting half way down and in a cross shape, this allows you to open the fig  up and stuff in the cheese.(use 25g in each fig).
- Once the chesse is in place time to wrap, using 1 slice of ham for each fig( you can always use more than 1 slice all depends on how hungry you are), wrap your ham around the side of the fig so the Chesse is facing upwards.
- Place onto a baking tray, drizzle the figs with a little oil and place into your preheated oven for 8-10 minutes. The ham should be crispy and the cheese melted.
- When ready pop them onto a couple of plates, place a handful of your chosen greens onto each, drizzle them with honey and a little more oil.

Then they are ready to eat and enjoy!!
