Cocktail of the week - JAMAICA GINGER SOUR

Dessert or cake themed cocktails are great fun and ideal for treating guests to a sweet surprise at dinner parties. Some of my other cocktails like Cherry Bakewell Sour & Lemon Meringue Pie have been very popular, so this time I thought I'd do my take on another British classic - Jamaica Ginger Cake.

You'll Need: (Serves one)

45ml Spiced Rum
15ml Ginger Liqueur
1/2 a Lime
Gingerbread Syrup
1 Egg White
Angostura Bitters
Ice
Shaker
Glassware - Martini Glass or Champagne Saucer
Garnish - Cinnamon & Raisins

The Method Behind The Madness:

1. Get your shaker & squeeze in 1/2 a lime, then add a splash of gingerbread syrup & a dash of bitters.
2. Add your egg white (egg white is a key ingredient in all "sour" cocktails, not only does it help to bind the flavours together, but it also gives the drink a lovely silky texture & smooth white foam on top).
3. Throw in Rum, Ginger Liqueur, a large handful of ice & shake.
4. Strain into your glass & garnish with raisins & ground cinnamon.
