Cocktail of the week - La Negronita

Happy New Year folks! If you're a fan of Negronis & Margaritas then this will be right up your street! Dry January... Never heard of it!

You'll need:

25ml Tequila
20ml Aperol
5ml Gin
Angostura Bitters
Vanilla Syrup
1/2 a lemon
Egg White
Cocktail Shaker
Martini Glass or champagne Saucer
Cinnamon Sugar (optional)

The Method Behind The Madness:

1. Get your shaker out & squeeze in 4 lemon wedges.
2. Add the tequila, aperol & a splash of Vanilla syrup (Monin syrup is ideal, you can find a bottle of it in the Estuary deli on the Broadway)
3. Add a dash of Angostura bitters & a shot of egg white ( the egg white will give the drink a nice silky texture)
4. Shake it to bake it!
5. Optional - Run a lemon slice round the rim of the glass & dip in Cinnamon Sugar ( To make cinnamon sugar combine 1 part ground cinnamon & 4 parts brown sugar and mix with a mortar & pestle)
6. Strain into your glass & garnish with a lemon twist.
