Cocktail of the week - SUNSET SOLERO

This week I've rustled up a fruity little spiced rum number. Its packed full of passion fruit, orange & pineapple flavours to replicate the classic Solero ice cream, and I've added a splash of grenadine for that nice sunset hue. 

You'll need:
- 25ml Spiced Rum (one with a smooth vanilla finish like Sailor Jerry works well)
- 15ml Passoa
- 15ml Galliano Vanilla
- 25ml Passion Fruit Coulis
- 25ml Orange Juice
- 25ml Pineapple Juice
- 1/4 of a fresh Lime
- A splash of Grenadine
- Garnish - Slices of fresh Peach

The method behind the madness:
1. Fill your shaker with ice & squeeze in a fresh lime quarter and some passion fruit coulis.
2. Add spiced rum, passoa, galliano, orange juice, pineapple juice & grenadine.
3. Shake and strain into a short glass over ice.
4. Garnish with fresh peach slices
