Cocktail of the week - CRIMSON & CLOVER

For the first of the Christmas specials I've taken a little festive twist on the classic Clover Club cocktail. The Pinot Noir syrup brings a nice warming note to the drink & makes for a perfect decadent tipple for this time of year.

You'll need:

  • 50ml Gin
  • A shot of Egg White
  • 1/2 a Lemon
  • 25ml Pinot Noir Syrup
  • Garnish - Grated Nutmeg

The merry method:

For the Pinot Noir Syrup:
Boil 100ml Pinot Noir with equal quantity sugar in a pan. Simmer for 5 minutes until it has reduced by half. Take off the heat and leave to cool to room temperature.

  1. Fill a cocktail shaker with ice and add a double shot of gin & a shot of egg white
  2. Squeeze in half a lemon & add a shot of Pinot Noir syrup.
  3. Shake hard, double strain into a champagne coupé or martini glass, then garnish with a sprinkle of grated nutmeg.
